Organic Bean recipes

Dry beans are harvested in their natural state and are processed with care. However, please sort, examine and rinse beans prior to cooking.

Thompsons Organic Bean Mix Chili Soup

Use our Organic Bean Mix to make this amazing chili soup.

Preparation

Bean soup mix preparation.

Thorougly rinse, sort and discard any natural debris. Place in a large bowl, cover with water and soak overnight in the refrigerator. Rinse again before cooking.

In stockpot, add prepared Bean Soup Mix and 6 cups of water. Bring to a boil, reduce heat and simmer until beans are tender, approximately 35 minutes. Drain.

Ingredients

  • 1 ½ cups | 375 mL Prepared Thompsons Organic Bean Soup Mix
  • 6 cups | 1500 mL Water
  • 1 lb | 454 g Lean ground beef
  • 1/2 cup | 125 mL Onion, diced
  • 1/2 cup | 125 mL Sweet pepper, diced
  • 1/2 cup | 125 mL Carrots, peeled and diced
  • 1/2 cup 125 mL  Celery, diced
  • 3 Garlic cloves, peeled, minced
  • 4 cups | 1000 mL Beef stock
  • 1 cup | 250 mL Tomatoes, diced
  • 1 tbsp | 15 mL Chili powder
  • 1 tsp | 5 mL Oregano, dry
  • 1/2 tsp | 2.5 mL Salt
  • 1/2 tsp | 2.5 mL  Ground black pepper
  • 1/4 tsp | 1.25 mL Cumin

Directions

In stockpot, add prepared Organic Bean Soup Mix and water.

Bring to a boil, reduce heat and simmer until beans are tender, approximately 35 minutes. Drain.

In a pan, brown beef then add onion, pepper, carrot, celery and garlic and sauté until soft. Drain.

Add to beans with remaining ingredients. Bring to a boil.

Reduce heat and simmer for 40 minutes.

Garnish with chopped cilantro and shredded cheese.

Makes 8 cups. Freezes well.

To make vegetarian (or vegan), omit beef, use vegetable stock and sauté vegetables in canola oil before adding to beans.
